Easter Baking: Chocolate Cornflake Nests

I do not do nearly as much cooking with Esther and William as I should.

Mainly because I am not very good at. I never seem to get the timings right.

Today though we did something very simple, that surely even I could not get wrong!!

We made chocolate cornflake nests with marshmallow chicks and bunnies on top!

First I cleared the kitchen and got all of the things that we would need ready.

Esther and William were in their boxes ready. They had a few cuddles while they were waiting!

And then we began.

We used 6 Mars Bars, 50g of unsalted butter, 2 tablespoons of golden syrup and about 200g of cornflakes.

First we cut up the mars bars into little chunks. Esther and William had their little toddler knives and tried to help with the chopping. They love chopping.

Next we put all the chunks into a glass bowl together with the butter and the golden syrup.

We melted all the ingredients together over a pan of boiling water. I always get nervous with this bit and so Daddy came to help.

Next we poured the chocolate mixture over the crispy, crunchy golden cornflakes and gave it a big mix and stir.

Esther liked helping with the stirring and the mixing.

She preferred a dessert spoon to a wooden spoon, I think because it made it easier for her to do this!!

Once all the cornflakes were covered in delicious chocolate we put some of the mixture into each of the little cake cases. We chose starry cases in memory of our beautiful Baby Tilda Mae.

Once each case was full of mixture and looked like a nest we added an animal. Some nests have little chicks on tops and other ones house bunnies. All made from yummy marshmallow! Though when I gave William a bunny to try, he spat it out of his mouth and gave it back to me saying, ‘Mummy, there is something wrong with this sweet!’ I don’t think my son is a marshmallow fan!!

The cakes look very pretty and I have to say that they taste pretty good too.

So, if you are looking for a beginners level baking task this Easter then perhaps this could be the one for you.

If I can do it, anyone can!

  1. Those baking boxes are a great idea! We’ve been making chocolate eggs and bunnies today, from moulds that my late great aunty gave me when I was younger than my son is now. Blog coming soon!

  2. “If I can do it anyone can” … You didn’t see my last year’s attempt at ‘so-easy a two year old could do it, but mummy can’t’ chocolate rice krispie cakes. Accidentally made chocolate mousse and had no where to put the rice krispies. Mars bar melting is clearly waaaay too advanced for me! Mousse was delicious though, Gordon Ramsay would not have shouted at me. It just wasn’t what I was trying to make….

  4. Thank you Jennie for posting this!! We had no plans today so this morning we walked to Tesco and bought all the ingredients and then after lunch and nap we made them. My two year old twins loved it so thank you for the suggestion. Like you I don’t cook with them often but this was easy and I followed your recipe. They’re yummy!!!!

  5. Mmmm – these look soo yummy. We’re making nests tomorrow but with chocolate cupcakes then decorated with chocolate icing / Flake and Mini Eggs (recipe on the back of the Mini Eggs packet). Yours look much easier!
    You could also melt the Mars Bar / butter / syrup mix in the microwave if you don’t like using the “bowl-over-the-boiling-pan-of-water “method. Just put the mix in a pyrex bowl or similar and cook in short blasts (I’d guess10 secs max at a time), stirring thoroughly before the next zap! We do this when melting chocolate as I feel it’s much safer with little ones around.
